Chef Ena: Thai Curry Recipe
I learned this recipe from my neighbor who is from Thailand. Make it hot or mild.
Ingredients
- 1/4 cup vegetable oil
- 1 lb Boneless chicken cut into inch pieces ( or pork, beef, fish and shrimp)
- 1 tsp curry powder
- 1-2 tsp curry paste
- 1 can Thai kitchen coconut milk
- 1-cup onion coarsely chopped
- 1/4 cup fish sauce
- 1 tsp sugar
- 1 carrot cut into round slices
- 2 cups chopped baby bok choy
- 2 cups Chinese long beans (or green beans) cut into 2 inches long
- 1 oriental egg plant cut into round slices
- 1 tbsp fish sauce
- 1 cup fresh basil leaves
- Fresh red chiles, thinly sliced (optional)
Preparation Instructions
Heat oil put curry powder and curry paste fry few minutes. Add coconut milk bring to boil. Add onion, chicken saute for a minutes. Add coconut milk, fish sauce and sugar bring to boil. Cover and simmer for 10-15 minutes. Add vegetables and let cook until tender. Stir in half of the basil.
Serving Suggestions
Serve with white or brown rice. Garnish with additional basil and red chile slices if desired.
