Chef Ena: Mango Medley Salsa Recipe

Ingredients:
- 6 Roma tomatoes
- 1 lightly ripened mango
- 1/4 cup chopped white onion
- 2 fresh jalapenos, chopped
- 1/2 cup chopped red bell pepper
- 1/2 cup chopped jicama
- 2 cloves minced fresh garlic
- 1 large avocado, peeled and chopped
- 1/2 tsp dried cilantro
- 1/2 tsp garlic powder
- 2 tbsp store-bought salsa
- 1/2 tsp Lawry's salt
- 1/2 tsp onion powder
- 1/2 cup chopped fresh cilantro
- 1/2 cup chopped green onions
- 1 medium-sized lime
Directions:
- Remove seeds from the tomatoes, chop them, and set them in a strainer to drain excess liquid.
- Remove seeds from the jalapeno peppers and finely chop them.
- Peel and chop enough jicama to make 1/2 cup.
- Peel and chop enough white onion to make 1/4 cup.
- Chop fresh cilantro to make 1/2 cup.
- Cut the avocado in half, remove the pit, and while still in the skin, score the flesh into squares. Scoop out into a medium-sized mixing bowl.
- Chop enough green onions to make 1/2 cup.
- Put all chopped ingredients into the mixing bowl.
- Add minced garlic and all dry ingredients.
- Squeeze the juice from the lime into the mixture.
- Mix well and let sit for at least 15 minutes before serving.
